What are the security requirements around sharing personal data via email?

I am looking for examples on how businesses govern the way personal data (excluding special categories of data) is shared via email. For example, when would it be appropriate to share a spreadsheet containing customers' personal data (excluding special categories of data) internally, via email, without password protection and when is it necessary to password protect such a document? Would this depend on the number of data items and number of data subjects? For example, any more than two data items and 50 data subjects have to be password protected when shared internally.
